To uninstall iPad apps, press the icon of the app until it starts to jiggle. At this time an “X” will show up in the upper left hand corner of the app, touch that X and then click “Delete”. To make sure the app doesn’t re-sync to your iPad, plug it into your computer, open iTunes and choose iPad>Applications. You can deselect the app in the Sync Applications list. If you follow these steps and the app hasn’t uninstalled, reboot your iPad and go through the steps again.

Some apps can’t be uninstalled due to the iPad factory settings. You can delete the icons though so they don’t show up. To do this, enable parental controls on your iPad and choose which applications you don’t want to have icons show up for.
