iPod Backups are stored differently depending on what type and version computer you have. Here is the list of locations:

iPod backup on Mac can be found at ~/Library/Application Support/MobileSync/Backup/.

iPod backup on Windows XP can be found at \Documents and Settings\(username)\Application Data\Apple Computer\MobileSync\Backup\.

iPod backup on Windows 7 or Windows Vista can be found at \Users\(username)\AppData\Roaming\Apple Computer\MobileSync\Backup\.
If you have setup iCloud backups, you can find your iPod backup on your iPod by choosing Settings>iCloud>Storage & Backup.
